Minty Peach Pudding -Pudding Pêche et Menthe

If you’re anything like me and went crazy with the amount of peaches you bought, you probably have a few very ripe ones. In order to use mines in a very delicious way, I ended up making a very quick and easy minty peach pudding, which requires only 6 ingredients and requires only 5 minutes of preparation time!

How have you used your peaches this year?

For 4 portions

Ingredients:

  • 1 pack silken tofu
  • 2 ripe peaches, + 1 more, sliced for topping
  • 1/2 ripe banana
  • 1 tsp vanilla extract
  • 2 drops mint essence
  • 1 tbs maple syrup

Preparation:

  1. Put all the ingredients in a blender and mix until smooth.
  2. Transfer into 4 small individual bowls and refrigerate for 1 hour to set.
  3. Top with fresh peach slices and serve.

Si vous êtes comme moi et avez acheté beaucoup trop de pêches, vous en avez certainement des très mûres. Afin d’utiliser les miennes d’une façon délicieuse, j’ai improvisé un pudding aux pêches et à la menthe qui ne demande que 6 ingrédients et qui ne demande que 5 minutes de préparation!

Comment avez-vous utilisé vos pêches cette année?

Pour 4 portions

Ingrédients:

  • 1 paquet de tofu soyeux
  • 2 pêches bien mûres + 1 pêche tranchée pour la garniture
  • 1/2 banana mûre
  • 1 tsp extrait de vanille
  • 2 gouttes essence de menthe
  • 1 tbs sirop d’érable

Préparation:

  1. Mettre tous les ingrédients dans un mélangeur et mélanger jusqu’à ce que la texture soit lisse.
  2. Transférer dans 4 petits bols individuels et réfrigérer environ 1 heure.
  3. Garnir avec quelques tranches de pêches et servir.

  1. Yum, this pudding looks great! The only pudding I’ve had since going vegan has been the sugar laden ones that I buy at the grocery store. Love that you only used a little maple syrup!

  2. Oh my goodness we have been buying SO MANY peaches ;p I’ve been having to freeze the overripe ones for smoothies, but this looks a better use of them. I’m not usually a big silken tofu gal, but I think with the texture & sweetness of peach I’d quite like this =)

    • I’m just like you Kimmy… I was never a fan of silken tofu and its texture. In this however, you can’t even tell it’s there! The texture is exactly like a regular pudding. Let me know if you try it!

    • My bad, I assumed that they were all the same (all the ones I looked at her in Canada are the same size). I used a 349g pack. In your case, I would use 1 1/2 peaches, 1/3 of a banana and the same amount for the rest of the ingredients. You can start with 1 drop of mint essence and adjust to your taste.
